Soak the Ralston Family Farms Pink Beans overnight: place in a large bowl, cover with cold water by 3 inches, and soak 8-12 hours. Drain and rinse. Add beans to a medium saucepan with 4 cups of water and bring to a boil. Reduce heat and simmer uncovered for 20-25 minutes, until tender but not mushy. Add salt in the last 5 minutes. Drain and spread on a sheet pan to cool to room temperature.

While beans cook, quick-pickle the onion: combine thinly sliced red onion, lime juice, and salt and set aside.

Prepare the cucumber: halve lengthwise, place cut-side down, and firmly smack with the flat side of a large knife until it cracks. Cut into rough ½-inch diagonal pieces.
