Mango Purple Sticky Rice
This recipe is inspired by travels to Thailand. Mangosticky rice is a popular dessert there. The texture & the sweet &savory combo is an incredible combination! This purple style mixup isa mashup of Japanese style purple rice. Purple rice has a more firmtexture & basmati has a fluffier texture. The two work so welltogether.

Preparation
- The purple rice and basmati rice will be cooked separately. The purple rice takes longer to cook, approximately 45 minutes.
- Place a medium sized pot over low heat and add the whole can of coconut milk, the purple rice, pinch of salt, star anise, all of the sugar, vanilla and 1 cup of water.
- Cook for approximately 30-40 minutes until the liquid is more syrupy.
- Once at this stage, remove the star anise, turn off the heat, cover with a lid for 10 minutes.
- While the purple rice is cooking, start the basmati rice.
- Place a medium size pot over medium/low heat.
- Add the basmati rice, 3 cups of water and a pinch of salt.
- Cook according to the package's directions.
- Once cooked and fluffy we will combine the two rices.
- Place in the fridge to chill completely. The combination should be a pretty purple, top with coconut, mango and enjoy!
