Ingredients

• 3 cups cooked Ralston Family Farms Golden Rice (or Basmati or Jasmine)
• 3 cups fine chopped arugula, loosely packed
• 1 ½ cups halved small Mozzarella balls
• 1 ½ cups halved cherry tomatoes
• 1/3 lb genoa salami, diced
• ¼ lb Prosciutto, chopped small
• ½ cup halved, pitted Castelvetrano olives
• ½ cup chopped sundried tomatoes
• 1/3 cup chopped pepperoncini
• 1/3 cup chopped roasted red peppers
• 1/3 cup shaved parmesan
• ¼ cup chopped basil
• 3 tablespoons chopped Italian parsley
• ¼ cup extra virgin olive oil
• 1/3 cup fresh squeezed lemon juice or white balsamic vinegar
• ½ teaspoon finely ground black pepper
