Simple Spanish Rice
Enjoy this simple Spanish rice dish as a tasty side at your next fiesta!
Made with Ralston Family Farms Basmati Rice
Ingredients
- 2 cups Ralston Family FarmsBasmatiRice
- 2 tablespoons cooking oil, we used avocado oil
- 1 cup onion, diced
- 1 tablespoon tomato paste
- 2 cloves garlic, minced
- 2 teaspoons chili powder
- ¼ teaspoon black pepper
- 1 teaspoon sea salt
- 1, 14.5 oz. can diced tomatoes
- 2½ cups chicken broth
For Garnish
- Cilantro
- Lime wedges
Instructions
- In a fine colander, rinse rice with water until water runs clear.
- In a large pot over medium heat, heat pan until hot.
- Add oil, then add rice to toast it, stirring every minute or so, for about 4 minutes until it starts to brown.
- Add onion and cook about 3 minutes until translucent.
- Add tomato paste, garlic, cumin, chili powder, black pepper, and sea salt.
- Stir to combine and cook 1-2 minutes until fragrant.
- Add diced tomatoes and chicken broth and bring to a boil.
- Stir, cover, and reduce heat to a simmer. Cook on low for 15 minutes.
- Remove from heat and keep covered to let steam for 10 minutes.
- Remove lid and fluff with a fork.
- Enjoy with your favorite protein and vegetables or on its own, garnished with cilantro and lime!
