Simple Spanish Rice

Enjoy this simple Spanish rice dish as a tasty side at your next fiesta!

Made with Ralston Family Farms Basmati Rice

Ingredients

  • 2 cups Ralston Family FarmsBasmatiRice
  • 2 tablespoons cooking oil, we used avocado oil
  • 1 cup onion, diced
  • 1 tablespoon tomato paste
  • 2 cloves garlic, minced
  • 2 teaspoons chili powder
  • ¼ teaspoon black pepper
  • 1 teaspoon sea salt
  • 1, 14.5 oz. can diced tomatoes
  • 2½ cups chicken broth

For Garnish

  • Cilantro
  • Lime wedges

Instructions

  1. In a fine colander, rinse rice with water until water runs clear. 
  2. In a large pot over medium heat, heat pan until hot. 
  3. Add oil, then add rice to toast it, stirring every minute or so, for about 4 minutes until it starts to brown. 
  4. Add onion and cook about 3 minutes until translucent. 
  5. Add tomato paste, garlic, cumin, chili powder, black pepper, and sea salt. 
  6. Stir to combine and cook 1-2 minutes until fragrant. 
  7. Add diced tomatoes and chicken broth and bring to a boil. 
  8. Stir, cover, and reduce heat to a simmer. Cook on low for 15 minutes. 
  9. Remove from heat and keep covered to let steam for 10 minutes. 
  10. Remove lid and fluff with a fork. 
  11. Enjoy with your favorite protein and vegetables or on its own, garnished with cilantro and lime!
