Ingredients
- 1 tablespoon olive oil
- 1 pound breakfast sausage
- 1 cup chopped kale
- 1 cup Ralston Family Farm Natures Blend Rice Grits
- 31/2 chicken broth
- 1 cup salsa
- 1 cup shredded cheddar cheese, more for garnish
- 1 tablespoon smoked paprika
- 8 eggs, prepared to your preference
- Salt and pepper to taste

- Cilantro
Instructions
Cook the Grits
In a medium heavy bottom sauce pot, add grits, chicken broth, and salsa. Stir once, cover, and reduce heat. Simmer for 20 minutes, occasionally stirring.
Cook the Sausage
In a cast-iron pan, brown the sausage. Once the meat is cooked through, add the kale and cook till soft. Remove from the pan and set aside.
Cook the Eggs
Cook your eggs using the same cast-iron skillet. We recommend two fried over easy eggs per portion. But this recipe will be just as good with scrambled eggs.
Serve
Scoop a generous portion of the rice grits onto a plate. Followed by the sausage and kale mixture. Then sprinkle with grated cheese and topped off with the fried eggs. Garnish it all off with cilantro. Enjoy!
