Green Grain Bowl

Made with Ralston Family Farms Purple Rice

Ingredients

  • 1/2 cup each of lentils, tri-color quinoa, and Ralston Family Farms Purple Rice
  • 2 zucchini’s, chopped
  • 1 bundle of asparagus, tips only
  • 1 broccoli crown, chopped
  • 1 cup of kale, chopped
  • 1/2 cup of edamame
  • 1/4 cup of roasted pepitas
  • 1-2 tbsp of avocado oil
  • Trader Joe's chicken-less seasoning salt and pepper, to taste
  • Juice from 1/2 a lemon

Tahini Dressing

  • 4 tbsp of sesame tahini
  • 8-10 tbsp of water
  • Juice from half a lemon
  • Salt, pepper, and garlic powder to taste

Instructions

  1. Cook lentil, purple rice, and quinoa according to package instructions (I was able to get away with cooking these together in one pot). 
  2. In a wok or large sauce pan, heat oil over medium heat. 
  3. Add all veggies, add chicken-less seasoning salt and pepper, and sauté until tender. When just cooked, add lemon juice and stir to combine. 
  4. Whisk together all dressing ingredients. 
  5. Combine grain mixture, veggie mixture, and roasted pepitas, top with tahini dressing. Serve immediately and enjoy!
