Cheesy Jasmine Rice with Garlic Buttered Asparagus

Garlic butter and asparagus make an unlikely duo in this delicious rice bowl. Fresh and springy, it will have you asking for seconds!

Ingredients

  • 1 cup Jasmine Rice
  • 1- pound fresh asparagus, tips only (cut the asparagus about 2 to 3-inches from the top)
  • 4 tablespoons butter
  • 3 garlic cloves, minced
  • 1/4- cup grated parmesan cheese
  • 2 tablespoons whole milk
  • 1 tablespoon fresh parsley
  • Salt and fresh ground pepper, to taste
  • Shredded parmesan cheese for garnish, optional

Instructions

  1. Prepare Jasmine according to the directions on the package.
  2. In the meantime prepare the garlic-butter sauce. Add butter to a skillet and melt over medium heat. Stir in garlic and cook for 4 to 5 minutes, or until lightly browned, stirring very frequently. Do not burn the garlic.
  3. Add asparagus to the skillet and saute until almost cooked.
  4. Stir in the rice, cheese, milk, parsley, salt and pepper. Cook for 1 minute, or until heated through. 
  5. Remove from heat. Garnish with parmesan cheese. Serve!
