Bacon & Garlic Butter Red Rice
Tender grains of Red rice bursting with bacon, fried garlic, and red onion…Oh so good! This bacon and garlic butter Red rice retains much of its texture and is a great centerpiece for any dish. We recommend that you serve it over blue corn chips with curry pickled red bell peppers, queso fresco and green onion.
Made with Ralston Family Farms Red Rice
Ingredients
- 6 pieces diced thick cut bacon
- 1/4 cup diced red onion
- 5 garlic cloves (minced)
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 1/2 cups Ralston Family Farms Red Rice
- 3 1/2 cups chicken stock
- 2 tbsp unsalted butter
Instructions
- In a large pot cook bacon until almost crispy. Add garlic and cook 1 minute, stirring the whole time.
- Next, add rice and toast for 2 minutes, stirring occasionally. Add salt, pepper and chicken stock and bring to a boil. Reduce heat and cover, cooking for about 60 minutes until tender.
- Stir in butter and serve.
Serving Suggestion
