Greek Rice

Enjoy the Mediterranean flavors of this light, fluffy side dish!

Made with Ralston Family Farms Basmati Rice

Ingredients

  • ¼ cup extra virgin olive oil
  • 1 ½ cups onion, chopped 
  • 2 Spring onions or green onions, chopped – whites and greens separated
  • 3 cloves garlic, finely chopped
  • 1 cup Ralston Family Farms Basmati Rice
  • 2 cups vegetable broth
  • 1 teaspoon salt
  • 16 oz baby spinach, large stems removed
  • ¼ cup fresh dill, chopped
  • 2 tablespoons extra virgin olive oil 
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh lemon juice
  • ¼ teaspoon black pepper

Serve With

  • Feta cheese
  • Lemon wedges

Instructions

1. In a fine colander, rinse rice with water until water runs clear.
2. Heat olive oil in a large pot over medium heat. Add onion, the whites of Spring onions, and garlic and sauté for about 4 minutes until starting to soften.
3. To the pot, add rinsed rice and sauté 2-3 more minutes to toast then add vegetable broth and salt and bring to a boil. Reduce heat to low, cover, and gently simmer for 15 minutes.
4. Remove rice from heat and keep covered to let steam for 10 minutes.
5. Remove lid and fluff with a fork, then gently stir in the greens of Spring onions, spinach, dill, parsley, olive oil, lemon zest, lemon juice, pepper, and more salt if desired to your taste.
6. Let herbs and spinach wilt a bit, about 5 minutes, then enjoy topped with feta and more lemon juice as desired.
