Affordable Meal Prep: Freezer Bean, Rice & Cheese Burritos

Made with Ralston Family Farms Jasmine Rice
Ingredients
1 cup Ralston Family Farms Jasmine Rice
1 ¼ cups vegetable or chicken broth
1 (15 oz) can diced seasoned tomatoes
½ tsp salt, or to taste
2 (15 oz) cans refried beans, regenerative if you can find them!
2 cups shredded jack cheese
8 large flour tortillas
Instructions
1. In a medium pot, bring the broth, tomatoes with juice, and salt to a boil. Add the Ralston Family Farms Jasmine Rice. Stir, cover and reduce to a simmer.
2. Simmer for 12-15 minutes or until the rice is tender and the liquid is absorbed.
3. Remove from heat and keep covered for 10 minutes to let steam. Fluff with a fork and set aside, uncovered, to cool.
4. Lay a tortilla flat and spoon about ½ cup beans into the center. Top with a ¼ cup cheese and 6 tablespoons cooked rice.
5. Fold the sides in, then roll tightly from the bottom up to form a burrito. Repeat with the remaining tortillas and filling.
6. Wrap each burrito in foil or parchment paper. Place in a freezer- a safe container or zip-top bag. Store for up to 3 months.
7. Reheat a. From frozen: Microwave for 2 - 3 minutes, then, if desired, toast in a lightly oiled hot pan over medium heat until golden on both sides. b. From thawed: Microwave for 1 - 2 minutes then, if desired, toast in a lightly oiled hot pan over medium heat until golden on both sides.
