Autumn Nature's Blend Soup

Made with Ralston Family Farms Nature's Blend Rice
Ingredients
2 tablespoons oil, we used avocado oil
1 cup finely chopped onion
½ cup finely chopped celery
½ cup finely chopped carrot
3 cloves garlic, minced
7 cups vegetable broth
1 cup Ralston Family Farms Nature’s Blend Rice
2 cups chopped sweet potato
1 teaspoon mustard powder
1 teaspoon sea salt
¼ teaspoon freshly cracked black pepper
1/8 teaspoon dried oregano
3 cups chopped kale
1 cup heavy cream
2-3 tablespoons lemon juice
Instructions
In a large pot, cook oil, onion, celery, and garlic over medium heat until softened and started to turn golden, about 5 minutes, stirring occasionally.
Add broth, Ralston Family Farms rice, mustard powder, salt, black pepper, and oregano.
Bring to a simmer and cook covered for about 25 minutes then add in the sweet potato.
Simmer and cook covered for another 15-20 minutes until the rice is cooked through and the sweet potatoes are tender.
Remove from heat and stir in the kale until cooked – about 3 minutes.
Stir in heavy cream and lemon juice. Taste and add a bit more salt if desired.
Serve immediately alongside some crusty bread for a rustic and filling vegetarian meal – perfect for Autumn.
