Cheesy Mexican Rice Dip Recipe

Try this easy, cheesy dip for your hungry family!

Made with Ralston Family Farms Jasmine Rice

Ingredients

8oz cream cheese, room temperature

½ cup salsa (spice level of your choosing)

32oz or 3 cups shredded cheddar cheese, divided 

2 cups cooked Ralston Family Farms Jasmine Rice – or your favorite variety!

1, 15oz can black beans, rinsed

Salt if needed

 

For serving

Tortilla chips 

¼ cup chopped cilantro, optional

Sour cream, optional

Fresh or pickled jalapeño slices, optional

Instructions

1.       Preheat oven to 400°F. 

2.       In a 2-quart baking dish, stir together cream cheese, and salsa until well combined. 

3.       Gently stir in 2 CUPS shredded cheese, Ralston Family Farms Rice, and black beans until just combined. Taste and season with salt if needed.

4.       Cover with aluminum foil and bake 20-30 minutes until it reaches 160-165°F internal temperature. 

5.       Uncover, top with remaining 1 CUP shredded cheese and return to oven until cheese is melty, about 5-10 more minutes.

6.       Option to serve topped with cilantro, sour cream and jalapeño. Enjoy warm with tortilla chips!
