Easy, 5-ingredient Rice Pudding with Fresh Berries

Ingredients
1 cup Ralston Family Farms Jasmine Rice
5 cups whole milk
2/3 cup sugar
2 teaspoons vanilla extract
ΒΌ teaspoon sea salt
Instructions
- In a fine colander, rinse rice with water until water runs clear.
- In a large pot add rinsed rice and remaining ingredients then bring to a boil. Reduce heat to low and, uncovered, gently simmer for about 30-40 minutes until the rice is tender and the liquid is reduced. While cooking stir mixture every few minutes, especially toward the end of the cook time when the mixture begins to thicken.
- Remove rice from heat and let cool to desired temperature, stirring occasionally.
- If refrigerating, bring to room temperature as quickly as possible, then cover and refrigerate.
- Serve warm or cooled rice pudding topped with fresh berries. Enjoy!
